It took me a while but I finally found sonic's post with the NASCAR setup guide:

Setup Guide

I figured with all the setup talk we've been doing I'd post it here.  I'm definitely going to use it to help set up my cars at the different tracks.  From what I've read it seems like there needs to at the very least be setup changes between all four different tracks; super speedway, speedway, short track, and road course.

I might recommend too that you try and tighten up your car quickly and then work it down towards the loose side.  Its much more tedious with a loose car always spinning then adjusting as opposed to a tight car, working the accelerator to keep it off the wall and getting an idea of several adjustments to make as opposed to just driving out and spinning.  My apologies if I state the obvious.

No worries bro - I'm utilizing both the tools linked above and the document you emailed me (which is embedded in the setup link above, by the way).

I was racing my career last night and used some of George's advice about lowering the front bias.  It definitely helped at just about every track I ran.  It worked especially well at Darlington, where I've had some trouble finding a good racing line.

Going to be posting some setups here that are good for both PS3 and X360. Got them from another site by a guy named GotBapes18. Enjoy and hope they can help somebody!

This game is so awesome bro - I find it real hard to get it out of the box to play anything else.  I've even neglected the daily in Tiger for the past two weeks.

I think what makes it real fun is having my steering wheel setup in my mancave.  It's about as real as it gets, without actually being at the track.

I reconmend for racers using linearity and responsiveness both at 80
the car will be at little loose in the beginning but once the tire heat up it will be perfect.
Enjoy.

Sweet mike, a big thank you for all NASCAR fans everywhere too!

One question, do you know what gameplay settings these are at?  I know that this is a start either way but that this also makes a big difference.

Rick, the Eagle has landed.  I repeat, the Eagle has landed.  Not bad at all either.  Not bad at all...wooohee!
